A Simple Tuna Casserole

Before leaving for our trip to Charleston, I ended up trying this tuna casserole recipe that I found on Pinterest and wanted to share it.

The ingredients were pretty simple and easy. I just picked up a can of sweet peas, 3 cans of tuna, 1 yellow onion, a bag of shredded cheese, salt, pepper, 1 can of Campbell’s cream of mushroom soup and some dumpling egg noodles. Everything cost no more than $20 and we had lots of leftovers. 

I cooked my noodles first….
Then just combined everything else in the pan and put it in the oven at 350 degrees for about 20 minutes. 

It came out cheesy and tender. It was lovely. I ate it with some warm french bread and voila a wonderful dinner in minutes. I love Pinterest. I wish this existed in my twenties! It would have helped out some much.

Chicken Tacos at Home

I saw this recipe on Pinterest and thought this is way too easy not to try.

I went to the grocery store and grabbed the ingredients. Didn’t look like much which was great! I am for recipes that only require 4 to 5 ingredients. 
I put the boneless, skinless chicken breasts in my crock pot for 10 hours with the chicken broth. They were so tender they fell apart as you picked them up. 
I then chopped up and pulled apart all of the chicken and added the Hidden Valley Ranch mix and the McCormick Taco mix to the chicken. Next, I stirred it all up. 
You can find these anywhere. 
After that all we had to do was grab the soft tacos, cheese and veggies and we had a delicious dinner that only took a few minutes to prepare. It was sooo good! 
I was so happy to find a recipe like this that was simple and easy. I love having great meals at home and I especially love it when they take little time and we can enjoy them at home. I hope that some of you are able to try this recipe soon.

My Favorite Wafer Treats

I shared one of my favorite cookies on my Instagram page a few weeks ago.



They are actually not cookies but wafers. I sure do love eating these! Goodness, they are good!
They are perfect little wafers with just enough chocolate or vanilla. I like both flavors. 
Vanilla, yum!
I hope that you can try them. They sell them at most grocery stores and the price is pretty reasonable too!

My Cheese Plate ~ 2018

The New Year has came and went and I decided to get another cheese tray for our New Year celebration. I stopped at Murray’s Cheese again in my local grocery store and had them prepare a tray.

So this year they added forteto pecorino toscano, creme brie, port salut, sartori extra aged asiago, turkish dried apricots (so good) and glazed, pecans, almonds and cashews! It was all so good. I also picked up this sweet french bread. It went so well with the cheeses. 
We also had a bottle of Risata and this year I got cherry sparkling wine for the kids. They loved it! I do enjoy buying cheese and learning about the different kinds. Laxative Organic Tea ~ A Wonderful Thing

I know this is an interesting subject to discuss but I do want to share a recent find. I am lactose intolerant and it is a pain! When we are on vacation I have to be very careful about what I eat and how often.

Whenever we go on trips I have to think ahead and plan out what I can as far as meals. If we have some dairy I have to make sure that it is towards the end of the trip otherwise it can be a long week.

Recently, when we were in New York I had some dairy early in the trip. I could not help it. The ice cream looked so good and I wanted to try it. But I knew what danger lurked around the corner and I knew that I was not in my own home. So once we left the ice cream shop I told my husband that I needed to find something to help me process it in a smooth manner.

And look at what I found at the local drugstore…..

I found this organic tea called Smooth Move Tea. It is sold everywhere! Walmart has it, Target, and Amazon. It is very easy to find. I was a little unsure if it would work but I was desperate and I am not a fan of Pepto Bismol. I feel worse after I have that!!!

So I purchased a box and it was wonderful!!!! Okay, this is how it works, so simple….

You steep your tea bag in hot water for 10-15 minutes and then squeeze out all the excess water. I add a slice of lemon and a teaspoon of honey to add a little flavor to it. The flavor isn’t bad I just like honey and lemon in my tea. 
Your drink it at night right before bed and when you wake up your tummy is ready to release! It is great. This tea gives your stomach that “gentle push” it needs to relieve you in the morning. This is a senna-based tea and gently stimulates your intestines and aids your body in the elimination process. It takes about 6-12 hours to work but once it gets started it doesn’t stop and I am telling you it works!
 I love it and know that if I have that large vanilla cone from Dairy Queen I can enjoy it because I will have my tea later on that evening and be relieved in the morning. Like I said I know this is a weird subject but I love to share things that I find that work. 
If you are like me and need a little push, you should try it. It is wonderful….

My Berry Tart


I remember trying this recipe 2 years ago see here if you missed it. The only mishap I had was that I used pie crust instead of puff pastry. Well, I fixed that and now I love making this easy, simple, and delicious recipe.

This time I used berries and strawberries. I was inspired to try berries because one of my favorite restaurants Carrabba’s  had this delicious dessert called the berry crostata. I LOVE IT! I mean really I do! They have not brought it back this summer so I decided to make my own.


I went to the grocery and picked up my fruit and rinsed it off. 


I followed the instructions for the puff pastry which was very easy and simple. You just have to let it sit out and thaw. After that, you put flour on your parchment paper and place the pastry on top. 




Put your fruit in the center (as much as you want) and add 2 teaspoons of sugar, a dash of salt, and fold the pastry around the fruit.


Cook for about 20 minutes at 350 degrees. Keep your eye on it and then you have this wonderful, crisp yet soft on the inside dessert. I eat my slice with some vanilla bean ice cream. It is heaven-sent. I enjoy this dessert so much and I hope you will try it and enjoy it too!

Champagne Truffles

One of my fav bloggers, and author Jennifer L. Scott shared a small video about her dinner rotation meal schedule several weeks back.

In that video she talked about these truffles that her husband purchased in London and came home with them. They looked so good in the video.

While me and my husband were shopping in our Keystone at the Crossing mall we came across them! I was so excited and remembered them from the video. Now these truffles are really expensive. For the two layer box it is $74 but on the day that we found them they were 70% off so we only paid $21.40! We ended up buying 2 boxes!

And Jennifer was right they are so good…..
