Bruschetta Bread

I found this wonderful and easy recipe from my favorite blogger Mrs. Nikki. Her blog At Home with Nikki is full of great tips, recipes and advice. I have always wanted to try this so when I saw it on her Youtube channel I could not resist!! The bread was so delicious and easy to make. It will be a winning dish when I entertain!

Bruschetta Bread


* French bread


* 2 tomatoes


* Olive oil


* Garlic powder


* Salt and pepper


* Basil (I used the bottle kind)


* Crumbled cheese


Bake the bread first in the oven at 400 degrees for about 15 minutes. Then take it out, drizzle it with your olive oil, top the bread with the tomato mixture, then add your crumbled cheese, basil and then your done!

Dipping Oil from Williams~Sonoma

Williams~Sonoma is a place I just love to visit! My husband and I always stop in to smell whatever they are cooking in the test kitchen and to see what new items they have. I love looking at all the dishes. My husband enjoys looking at the different types of seasonings they may have.

He stumbled on to the dipping oils. We purchased two and love them both!! You have to try them. They are absolutely wonderful with warm french bread and if you don’t know what french bread to try see my blog entry here about that. Enjoy!!!

My Strawberry Tart

I love trying new recipes! I saw this on Julie Blanner’s Lifestyle Blog. It is absolutely delicious and easy!

The recipe is below and visit Julie’s blog. It’s fantastic!!!

Ingredients
  • 1 sheet puff pastry
  • 1 c strawberries, sliced
  • ½ c sugar
  • fresh cracked salt
Instructions
  1. Preheat oven to 400 degrees.
  2. Roll thawed puff pastry sheet on a sheet of lightly floured parchment paper.
  3. Add a cup on strawberries. If desired, use a cake pan & a pizza cutter to create a circle vs rectangle.
  4. Sprinkle sugar over top. Add 3 cracks of salt.
  5. Fold edges over & bake 15 minutes or until edges are slightly

Egg Batter Fried Chicken

When I was in high school my mother taught me this recipe. She would season her chicken, dip it in egg batter then flour it. She would then place it in the frying pan and oh my goodness! The most delicious and crispy chicken would come out!

I made this for my family recently! It was a big hit!!

Egg Batter Fried Chicken

1 pack of split breast chicken or chicken with the skin on it

Season salt

Salt & pepper

Medium bowl of flour

4 eggs

1 bottle of vegetable oil (I know this is bad. That’s why we don’t eat it all the time)

Season your chicken they way you prefer it. I use season salt and I sprinkle that all over the chicken. I also sprinkle some salt and pepper all over the chicken. Once the chicken is seasoned I mix the four eggs in a bowl and dip the chicken in the egg batter.  Then I take the chicken and dip it into the bowl of flour.

I have my pot heated with the vegetable oil and then I just place the chicken in the hot vegetable oil to fry. It takes about 20-30 minutes. Comes out so beautiful and crispy!!

My Blueberry Cake

I recently tried a new recipe. It’s called Blueberry cake and I found it in my At Home with Madame Chic book. I just had to try it and it was delicious! If you missed my entry for Apple Cinnamon Tea Cake see here. The ingredients are below. Enjoy!

Blueberry Cake

1/2 cup butter, room temperature

1/2 cup sugar

1 teaspoon vanilla extract

1/4 teaspoon salt

2 egg yolks

1 1/2 cups of all-purpose flour

1 teaspoon baking powder

1/3 cup milk

1 1/2 cups fresh blueberries

2 egg whites

1/4 cup sugar

1 tablespoon all-purpose flour

1 tablespoon sugar

Preheat oven to 350 degrees F. Grease and flour an 8-inch baking pan. Cream the butter and 1/2 cup of sugar. Add vanilla and salt. Separate the eggs and reserve the whites. Add yolks to the sugar mixture and beat until creamy. Combine 1 1/2 cups of flour and baking powder and add it alternately with the milk to the egg-yolk mixture. Coat the berries with 1 tablespoon of flour (this prevents them from sinking to the bottom of the cake) and add them to the batter. Mix with a spoon to avoid breaking up the berries. In a different bowl, beat the egg whites until soft peaks form. Gradually add 1/4 cup of sugar and keep beating until stiff peaks form. Fold the egg whites into the main batter. Pour into your prepared pan. Sprinkle the top with the last tablespoon of sugar. Bake for 50 minutes or until the cake is set.

French Bread

I love french bread! I have it almost everyday. I discovered this Pillsbury french bread a few years ago at the grocery store. It is so easy to make and when we have guest over for dinner they enjoy it as well.

If prepared right, it is so soft and so delicious. I prepare it with my dinner dishes as well as breakfast. I love it in the morning with scrambled eggs and blackberry preserves! Oh so good!

Below are the steps, it’s pretty simple. I hope you try it!

Here it is still in it’s package.

You take it out and cut slits into it.
Make sure you spray your pan with some cooking spray.

You bake it at 350 degrees for about 20 minutes.
Keep an eye on it!

This is the finished product. I put butter on it. Oh my!! Delicious!




I also have it in the morning with turkey bacon. 

Just wonderful!
