Chicken and Bow~Tie Pasta

I am always trying to come up with different ways to prepare meals at home. I like to try different recipes but having some trusty favorites is a good thing also.

I came up with this on short notice. I wanted some roasted chicken and cheese but I didn’t know how I could tie it all together. But then I thought about the bow-tie pasta I had in the pantry and then it all came together.

Chicken Bow-Tie Pasta

* I just roasted two large chicken breast in the oven ( 400 degrees with olive oil and salt & pepper) for about 40 minutes
* Boiled some bow-tie pasta  (half a box)
* Cooked some broccoli   (about 2 cups)
*  Once it was all cooked I threw it all in a baking dish, seasoned it with more salt & pepper and added some cheese on top.
* I let it cook for about 15 minutes in the oven

Pulled it out and let it cool while the french bread was baking. Once the bread was done, voila! Dinner served!

Easy Bundt~Pan Pizza

I am always looking for simple delicious recipes for me and my family. I follow a woman named Nikki on Youtube and she is great at decorating, organizing, and cooking. This past week she posted this great recipe for pizza and I just had to try it.

It is called Bundt ~Pan Pizza. The ingredients are:

* 2 cans of Pizza crust
* 1 tsp of mince garlic
* 2 tsp of olive oil
* 2 tsp of Italian seasoning
* 1 bag of pepperoni
* 2 cups of shredded mozzarella cheese

And for the instructions please watch the Youtube video below. It is so much easier if you see it done. I made it and it was a big hit at my house! My stepson asked for it again the next night! So I hope you try it and let me know your thoughts. Enjoy!

The Frittata ~ A Simple Breakfast

So as most of you know I purchased Style & Simplicity a few months ago. There is a chapter in the book called “Frittata”. Ted gives you a simple recipe for creating this beautiful breakfast dish. Now I have heard of a frittata from Ina Garten. I record all her shows on Sundays and she made a frittata in one of the episodes.

So once I read this from Ted I thought, “I have to try this”. So I followed the recipe and it turned out great! I loved it! It was so simple and quick. I added some french bread and a glass of o.j. it was a great Sunday breakfast.

So here is the recipe and also here is the blog entry from Ted (see here). I hope you try it and enjoy it as much as I did! Enjoy!

1) Break 5 eggs into a bowl, add a splash of milk, a few pinches of salt, a pinch of pepper and whisk together. 
2) Turn on broiler in your oven so it begins to heat up. You will want to use a non-stick skillet that can go in the oven for the frittata. 
3) Turn heat to the lowest setting on the stove top, and add enough butter so the skillet is fully coated and melts completely. 
4) Add the egg mixture to the skillet. Add crumbled bits of smoked salmon and scattered bits of herbed goat cheese around the eggs. 
5) Let the eggs cook just until they have set on the bottom, but are still runny on the top. 
6) Take the skillet and place under the broiler that you turned on earlier. You want to stay with this dish as it cooks. The eggs will start to bubble, brown, and puff up. Once the entire mixture is set, take out from under the broiler, making sure to wear a heat proof cooking glove or use a hearty pot holder. The handle is going to be quite hot. Serve with toast. This also makes a lovely lunch or Summer supper served with a salad and a glass of Chardonnay.

Roasted Chicken- Simple & Delicious

I have really fell in love with this recipe this year. It is so simple to make and has graced our dinner table so many times for the past few months!! Once I learned how to make it now I keep chicken and red potatoes in our fridge every week!

I do the following:

* Rise off my chicken and pat dry
* Season it with salt and pepper
* Spray my baking pan with Pam and pour a little olive oil into it
* Rise off my red potatoes and cut them into halves
* Place them into the pan and sprinkle them with salt, pepper and olive oil

* I then place my chicken on top of the potatoes or you can put the chicken into a separate pan
* Sprinkle some more salt, pepper and olive oil onto the chicken
* Bake at 400 degrees for about 45 -50 minutes

Let it cool off and serve with some vegetables and french bread. My family loves it. Below is a link to Ina Garten’s (The Barefoot Contessa) video for roasted chicken. Enjoy!

Light Summer Dinner~ Taco Salad

I loved taco salad as a kid! Whenever my mom made it we were always in the house ready to enjoy it! I learned how to make this from my mother but have changed a few things to suit me. This is a simple recipe so anyone can make it. I hope you enjoy it!

* 1 pkg of ground beef

* 1 bag of tortilla chips (of your choice, I use the Tostitos brand and I love the hint of lime flavor)

* 1 pkg of taco seasoning

* 1 tomato (diced of course; I use a can of tomatoes with the peppers and seasons already in it)

* lettuce

* 1 bag of mozzarella cheese or cheddar cheese (your choice)

*  1 bottle of Ortega taco sauce

First you brown your ground beef. Then you sprinkle in your taco seasoning. Cook it for about 3 minutes more. While its finishing I grab my bag of chips and I place a few on my plate. I then take my meat and top the chips with it.

Next, I put on the cheese so it can melt on the meat. Then I add the lettuce, tomatoes and lastly the Ortega sauce. It is such a simple and fast meal. My family and I always enjoy it!

Panko Crusted Chicken

 A few weeks ago I went to pick up my daughter from my mother-in -laws. She is always cooking fantastic dishes. On this day she was cooking Panko crusted chicken with rice-a-roni. It looked and smelled delicious! So when I got home I was inspired to try it. It turned out great. The recipe is below. Enjoy!

* 2 Tbsp flour
* 1/2 Tsp salt
* 1/4 Tsp pepper
* 1 egg, beaten
* 1 cup Progresso plain panko bread crumbs
* 4 boneless skinless chicken breasts
* 2 Tbsp oil or butter

Directions:
1. Place flour, egg and bread crumbs on separate plates.

2. Mix salt and pepper into flour.

3. Coat chicken with flour mixture, dip in egg, coat well with bread crumbs.

4. In 12-inch nonstick skillet, heat oil over medium heat.

5. Cook chicken in oil 8-10 minutes, turning once, until thickest part is 165F and coating is golden brown.

Baking option: (for fish, chicken or pork)


Heat oven to 375F. Spray baking dish. Follow steps 1-3 above. Bake chicken or pork 20-30 minutes, until thickest part of chicken is 165F and  is no longer pink in center.

Homemade Banana & Walnut Cake

I am really starting to like baking and I love the Better Homes and Gardens Youtube channel. I am learning so much from this channel. The recipe videos are just fantastic! It is so easy to watch them. I got this recipe from it and my family just loved it. Below is the recipe and my photos. Enjoy!

Ingredients


Original recipe yields 2 – 8 inch round layers

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 – 8 inch round pans. In a small bowl, whisk together flour, baking soda and salt; set aside.
  2. In a large bowl, cream butter, white sugar and brown sugar until light and fluffy. Beat in eggs, one at a time. Mix in the bananas. Add flour mixture alternately with the buttermilk to the creamed mixture. Stir in chopped walnuts. Pour batter into the prepared pans.
  3. Bake in the preheated oven for 30 minutes. Remove from oven, and place on a damp tea towel to cool.
