Caramel Cake ~ New Recipe

Good Morning and Happy New Year!

We have nothing planned this evening. Just a quiet dinner at home, my cheeseboard, some wine, and maybe a movie. I am putting up my Christmas decor today, washing bed linens, and vacuuming my entire home. I am also burning my fresh cut roses candle from Yankee Candle. It is one of my favorite scents. I want to wish you all a Happy New Year filled with peace, health and of course elegance!

Now I want to share my glorious semi-homemade caramel cake recipe!

Okay, so this is a semi-homemade recipe. The cake part is actually a basic yellow cake. I used the Betty Crocker Super Moist Yellow Cake mix and it turned out so wonderful. It was so moist and delicious! I also decided to use a bundt cake style pan and I loved the way it turned out.

Now the caramel icing is homemade and I decided to give this recipe a go and it worked out beautifully! It only required 4 ingredients and a lot of stirring but it was so worth it and my entire family loved my cake! Now the recipe did not call for pecans but I just kept looking at it and my husband asked me if I was okay with how it looked and I said, “you know I do want to add some crushed pecans”! He said go for it and I did. It added the perfect amount of crunch and salt to my sweet caramel cake! I could not be happier!

This was my table setting this year. I wanted something with blue in it. Last year and the years past I always had red and this year I wanted something different. I do love the way it turned out!

I can’t believe how fast this year flew by. I hope 2022 is a year of peace for everyone. Have a wonderful weekend!

    Hi, Mrs. Shockley,

It’s been a strange holiday season. Two of my events were cancelled due to the host either having Covid or being exposed to it. Now that plans have changed, my husband and I are just staying home to enjoy a nice meal and a game. This weekend I will follow your lead and put Christmas decor away and reset the house. Wishing you a very happy new year! Thanks for all you do!

Oh not that is too bad. The same happened to me. My mother-in-law was exposed to Covid two days before Christmas and went into panic mode. So our holiday was not the same either. I am so glad that I made Christmas dinner. It’s a shame that we have to live this way. Happy New Year to you!

My dear Mrs Shockley. This post was just the diversion I needed. A tornado struck my town early this evening here in Newton County, GA. The scary thing is, I heard nothing. It was rain but not too much wind. It hit the Chikfila and CVS which are 1.7 miles from my house. My nerves are rattled. It jumped across my neighborhood I guess. There is no damage here. Down the road there is. Earlier this week you mentioned scary weather and you were certainly correct. Today it was 72 degrees and rainy. We have more extreme weather for next 24-48 hours. I don’t think any lives were taken. I know a woman was trapped in her at the Chikfila because it picked her car up and threw it onto it’s side. I just pray that we all survived and…

That cake sounds wonderful. I think I’ll make that. Pecans make everything better?Years ago I was going through an extremely rough season and I had to sell my beloved Kitchenaid stand mixer. Well thanks to a suprise bonus at work, I treated myself to a new stand mixer. I purchased it in dusty rose pink and I bought a floral ceramic bowl to use instead of the traditional stainless mixing bowl. I had no idea Kitchenaid had all these designer bowls. I’m so obsessed with my new mixer. I already made a batch of ginger cookies. I found the recipe from Elle Florence’s bistro blog. She has a youtube channel too. I like that girl. She passed the bar this summer, so you all have something in common being in law. I think she’s darling. That’s been my December favorite?. Enjoy your evening dearest. Blessing Mrs Shockley and family ????

Oh my goodness! I am so sorry to hear about a tornado, in December! Scary weather indeed! How exciting about your new mixer. I love those and I have always wanted one but use has a handheld mixer that belonged to my husband’s grandmother. I love it and love the sentimental value that it has.
I hope your cookies turned out well. I love ginger snaps. Are those the same? I will definitely look up Ellen on Youtube. Many blessings to you and Happy New Year!

That is precious to have his grandmother hand mixer. I’d used that too. These ginger cookies where more chewy IMO than a ginger snap. Just as good
I saw Ina has a ginger cookie recipe that uses crystalized ginger. I’ll be making them next?

    Happy New Year Mrs. Shockley,

Oh I just love your table setting. I think I’ll be revisting this post for the next Christmas table setting. Everything about it says elegance, yet simplicity. I also didn’t do much of red and honestly I loved it.The caramel cake looks delectable. I am definitely going to try that here soon. I prefer baking to cooking. Thank you for sharing your table setting and the new recipe. It’s delightful to me, when you share your home. I love every bit of it. Everything’s elegant, yet realistic.

    Talk soon,

    Mya

      Happy New Year Mya,
Thank you for the compliments. Trying to find inspiration for table setting can be difficult sometimes. I like to use items that I have. That helps me to feel better about my home decor. I hope that you will send pictures of your table setting next year!
